Rachel’s Healthy Toasted Muesli

Finally a muesli with a winning combination! Full of lots of goodness for a great start to the day. Hazelnuts, sunflower seeds and pepitas for a good dose of unsaturated fats in the morning. Chia and flaxseeds for your omega-3′s and chopped organic dates for some sweetness. All rounded up with some oats a good source of soluble fibre and toasted for a richer flavour. You only need a heaped 1/4 cup of this muesli to start the day because the wheat germ will help to keep your tummy full all morning long.

Breakfast is the easiest time of day to to increase your intake of soluble fibre which is important for managing your blood glucose and cholesterol levels, and for appetite control

Ingredients for Healthy Toasted Muesli with Omega-3′s

2 cups traditional oats
1/2 cup wheat germ
1/2 cup chopped organic dates or local sultanas
1/2 cup hazelnuts
1/4 cup flaxseeds (linseeds)
1/4 cup chia seeds
1/4 cup pepitas (pumpkin seeds)
1/4 cup sunflower seeds
1/2 tsp cinnamon
pure maple syrup or honey to serve

Method for Healthy Toasted Muesli with Omega-3′s

First toast the hazelnuts in an oven preheated for about 7-10 minutes at 180 degrees Celsius. When they are finished take them out and rub their skins off in a tea towel then roughly chop skinless hazelnuts.

Next lay out the oats on a baking tray and toast in the oven for 10-12 minutes, shaking a few times while cooking to ensure even toasting

While the oats are cooking combine the rest of the ingredients. Add the oats once they are finished and voula! Store in an airtight container or jar and serve with your choices of milk (i like soy) or yoghurt and top with pure maple syrup or honey if so desired.

A note on wheat germ: The ‘germ’ portion is where most of the nutrition lies in a wheat kernal and is the main source of essential fats and vitamins. Because of the delicate oils in the wheat germ it is prone to rancidity whicn can lead to destruction of all the goodness in the wheat germ. Please store it in the fridge and if possible buy it from a seller that keeps it refrigerated.
