I have had some bad experiences with supermarket tomatoes… bland, watery and overpriced. Well I am here to let you know this is not always the case! Local and organic cherry tomatoes purchased from a local honestly box have proven that tomatoes can and do taste amazing, we just have to know where to buy them.
This is a Jamie Oliver inspired recipe. It is a super simple recipe but I couldn’t think of a better way to enjoy these little gems. A local soft cheese, fresh herbs, sea salt – voila!
Ingredients for Fresh Tomato Ensalada
1 punnet of rainbow cherry tomatoes sourced from a reliable seller
30-50g of soft white cheese
10 fresh basil leaves
good quality olive oil
sea flakes salt
freshly cracked pepper
Method for Fresh Tomato Ensalada
Chop the larger tomatoes in half, leave the smaller ones whole if desired.
On a cutting board or in a shallow bowl lightly caress the tomatoes together to release some of the juices.
Sprinkle on the basil leaves, lightly shredding the larger leaves if desired.
Slice the cheese into bite sized pieces.
Drizzle lightly with olive oil. Add a sprinkling of sea flakes salt and pepper if desired.
